It would be really awesome if users had their own ability to create their own additional "groups" that anyone could join. They need not have any major priviledges (like a moderator or admin would), other than to create or edit a "group" page. Perhaps each group could have its own devoted wiki page and/or forum thread. I suppose it would be similar to a Facebook group to those familiar. Just an idea…. it would be awesome for my site. :D
Is it possible at all to list the members who aren't moderators or admins? Just normal members?

Unfortunately, there is no way to do that. The ListUsers module will eventually be able to do that (as well as offering several other possibilities) but it hasn't been fully implemented yet. Is there a way to sort the list? By name, or date?
Eskobar, probably the best place to request a feature like this would be http://feedback.wikidot.com - just have a quick look first to make sure there are no existing wishes that are similar to what you want :)
It would also be nice to be able to sort general usership in terms of most recently active, in order to help determine what users are no longer active on the site without looking up individual members
